Sorry to disappoint, but none of the episodes in the main Blue Exorcist series show Rin or any of the characters as grown-ups. You'll have to use your imagination!
As someone who has watched every episode, I can confirm that Blue Exorcist doesn't show the characters as adults in any of the episodes. Stick to the manga for those stories.
For Blue Exorcist fans, the best bet for seeing a more mature Rin is in the manga rather than the anime. The anime doesn't really show him grown up.
