Alright, Inkling! Your main goal against the first boss, Octostomp, is to dodge its attacks and ink its weak spot on the back. Once you ink it enough, climb up and hit the glowing tentacle! Rinse and repeat until you squash that big block of angry octopus.

Just avoid Octostomp's charges, ink it up, and then climb to attack its weak point. Easy peasy!
