In my experience, the easiest way is to compare the physical appearance of your console with images online of the different versions. The Xbox 360 E looks more like an Xbox One, while the 360 S is sleeker than the original.

Check the model number on the back of the console, then Google it. Easy peasy!

If your 360 has touch-sensitive buttons and a shiny finish, it's likely an Xbox 360 E. If it has a matte finish and physical buttons, it's probably an Xbox 360 S.
