In Fallout Shelter, you can discard one objective per day if it feels too hard or just not fun for you. Just tap on the objective and hit that 'X' to say bye-bye to it! Then, wait for the daily refresh to get a new one. It's like magic, but you know, the post-apocalyptic kind.
