On PlayStation, Subnautica saves are stored in the system storage. You can find them through Settings > Application Saved Data Management.
Switch user here! Just head to System Settings > Data Management > Save Data/Screenshots and Videos > Delete Save Data. Not to delete, but to see where it is!
Xbox player here! For Xbox, your Subnautica saves are automatically backed up to the cloud, so you don't need to worry about manually locating them.
Honestly, cloud saves are a lifesaver. No need to stress over manually finding them!
