Keep exploring, interact with the environment, and you might just get a hint or two about any mythical creatures lurking around. I'm pretty sure there's no 'Zelda's dragon' in Tears of the Kingdom. Maybe you're thinking of a different game? Zelda games do have dragons, but they're not owned by Zelda.

Dragons in Zelda games are usually Easter eggs or part of a quest. So for Tears of the Kingdom, think less about 'Where is the dragon?' and more 'What quests haven't I completed yet?' You might just find what you're looking for when you least expect it.
