I swear I saw a hen once by the roadside near some farm in the Paleto Bay area. Honestly, though, they're not that common. If you blink, you might miss it. Good luck!

Hunting for a hen in GTA 5, huh? Funny enough, your best bet is to head over to the countryside areas around Blaine County. You'll often find chickens roaming around farms there. One hot spot to look out for is the area around Grapeseed, where you can spot them pecking around without much hassle. Just don’t cause too much chaos while you're on your poultry quest!

Definitely spotted some hens wandering around the farms in Grapeseed. Was on a mission and got distracted by them. So, can confirm they exist. Just cruise around the countryside and keep your eyes open.
