Just buy them from Nook's Cranny, dudes. They sell pumpkin starts in October. Super easy.

To get pumpkins in Animal Crossing, especially if you're playing New Horizons, you first need to wait for the month of October. During this time, you can buy pumpkin starts from Leif when he visits your town or from Nook's Cranny. Once you plant these starts, you'll have pumpkins growing in no time! You can plant them anytime in October and they'll grow, plus, you can keep planting and harvesting them all year round if you've got the starts.

Honestly, just wait for Leif. His pumpkin starts seem to grow faster and healthier pumpkins for me. Might be just chance, but it's been consistent.
