Start with Fullmetal Alchemist: Brotherhood, then watch the original Fullmetal Alchemist for a different perspective. Brotherhood is closer to the manga!

I've watched both, and honestly, Fullmetal Alchemist: Brotherhood is the way to go. It sticks to the manga and has an amazing storyline! Once you fall in love with the Elric brothers, you can go back and watch the 2003 version to see the differences.
