Assassination Classroom ended because the manga it’s based on reached its natural conclusion. Yusei Matsui wrapped up the story beautifully, tying off all the major plot points and giving characters proper closure.

Because even a tentacled super-teacher needs a well-deserved rest after saving the world! Seriously, the story was completed as intended.

Matsui-sensei didn't want to pull a Naruto and keep it going forever. Quality over quantity, folks!

Every good story must come to an end! Assassination Classroom followed the arc of Koro-sensei's timeline, and they chose to end it meaningfully rather than drag it out.
