Sometimes it’s a simple glitch! Restart your Switch or log out and back into Fortnite to see if it resets.
Nintendo and Epic Games sometimes have server issues, so it might be a temporary problem.
Check your region settings. V-Bucks might not be available in your location due to regional restrictions.
I've had this problem before. I fixed it by updating Fortnite and my Nintendo Switch system to the latest version.
