Gintama ended because the manga reached its natural conclusion. The author, Hideaki Sorachi, wrapped up the storylines and character arcs in a satisfying way. All good things must come to an end!

Truthfully? It ended because Sorachi-sensei finally ran out of jokes! Just kidding. He just wanted to give us a perfect ending before moving on.
