Simple answer: Togashi’s health problems have put pauses on the manga, so the anime ran out of material to adapt. Fingers crossed for his recovery!

Hunter x Hunter anime ended because the manga author, Yoshihiro Togashi, often takes long hiatuses due to health issues. Hopefully, he'll be back soon!
