Most likely, it's your brain misinterpreting muscle relaxation as a sign you're falling, so it sends out a jolt to 'catch' you.

It's called a hypnic jerk! Basically, your muscles twitch as your body transitions from wakefulness to sleep. Kinda like your body's 'are we sure we wanna sleep?' check.
