Fruits Basket needed a second season because there's just too much story and character development to fit into one! The manga is pretty extensive, and fans would riot if they didn't get more Tohru and Sohma family magic.

Simple answer: the manga is long, and there's still a lot of story left to tell. Fans wanted it, and the creators delivered!

The first adaptation back in 2001 only covered a portion of the manga. The newer adaptation, including the second season, aims to cover the entire story.

As someone who watched both adaptations, I can tell you that the second season dives deep into the character arcs and backstories that weren't explored before. It's essential for understanding the full scope of the Sohma family's curse.
