Hot take: Maybe nobody wants to risk angering the Sonic fanbase by touching those beloved tracks. They can be... passionate.
From my experience, Nintendo usually picks the best tracks available and those Sonic jams are already perfect the way they are. No remix needed!
Probably because the original Sonic tracks are already too iconic to mess with! Gotta go fast, but not too fast in changing classics!
