Starfield is exclusive to Xbox consoles and PC because it's developed by Bethesda Game Studios, which is now part of Microsoft. So, think of it as their way of keeping all the space goodies in-house!
I played the demo on PC, and let me tell you, it's worth the exclusivity! Microsoft wants to make their platforms more attractive, and Starfield is their shining star.
