The game is named after Princess Zelda because she's central to the storyline, even if you spend more time playing as Link. Shigeru Miyamoto, the creator, thought her name sounded mysterious and exotic!
They named it after Zelda. End of story.
It's called 'The Legend of Zelda' because 'The Legend of Link' just doesn't have the same ring to it!
