Greyed-out plants might also indicate that they're not fully grown yet. Give them some time to mature!

For me, greyed-out plants meant I hadn't scanned the necessary blueprints yet. Try scanning more stuff around to unlock it.

When a plant is greyed out in Subnautica, it usually means you're too close and need to back away to interact with it.
