Do you like VHS or Blu-ray? That's kinda the difference. The 2011 version has better animation and follows the manga more closely.

The original series came out in 1999, but it got rebooted in 2011 for better animation and to stay closer to the manga!

Technically, the 1999 version stopped before the story was finished. The 2011 reboot continues where it left off.
