They had to squeeze all the juicy plot points from the manga into a limited number of episodes. Basically, it's like trying to stuff a Thanksgiving turkey with all the side dishes!

They didn't have enough episodes to cover everything in the manga. Simple as that.

They crammed too much story into too few episodes, missing out on some of the depth and character development. I read the manga afterward, and it made so much more sense!

Honestly, it felt like they were in a hurry to finish, which led to skipping important story arcs and details from the manga. Still good, though!
