Make sure your PS5 firmware is up to date. Sometimes an outdated system can cause connectivity issues. You can also try connecting your controller via a USB cable to see if it establishes a connection that way.
I've had this issue before, and it turned out that another Bluetooth device was causing interference. Try turning off other Bluetooth devices nearby and see if that helps!
Have you tried turning it off and on again? No, seriously, a simple reboot of your PS5 can sometimes solve the problem.
