It zooms through the plot because they tried to condense a dense manga into a shorter anime format. Some fans were not happy about that!
Blame the pacing! The anime skips a lot of details and character development, making it feel like it's on a sugar rush.
I think it's fast because they wanted to cover as much ground as possible in a limited number of episodes. Quality over quantity, I guess?
