Games on Game Pass cycle in and out because of deals between Microsoft and game publishers. GTA 5 was probably removed because its deal period ended. Think of it like shows on Netflix; they don’t stay forever!

From what I heard, GTA 5 was taken off Game Pass to encourage folks to buy it instead. It's a classic strategy - get gamers hooked, then pull it so they gotta shell out cash to keep playing.
