Itdori wasn't in Jujutsu Kaisen 0 because that story takes place before he got involved. It's all about Yuta Okkotsu and his own tale with Rika, the cursed spirit. Think of it as a prequel that sets up the world but doesn't need the current main squad to tell its story. Itadori was probably munching on some normal fingers (as in finger foods, folks) unaware of the cursed world drama.
