Absolutely! While you can only pick one starter in the very beginning, there are a couple of ways to get the others. The most traditional method is by trading with friends who chose the different starters. If you've got no one to trade with, online forums and communities are full of people willing to trade! Yes, you can, but trading is the key. Got all three starters myself this way! The trading community in Pokemon Scarlet and Violet is super helpful, and it didn't take me long to find trades for the ones I was missing. Just make sure you have something decent to trade in return.
