Just look in your CS:GO folder, usually under 'Steam\steamapps\common\Counter-Strike Global Offensive\csgo\cfg'. Your config file should be there with a '.cfg' extension. Open it with a text editor to see all your settings.

Oh, that's easy peasy! Just hop into CS:GO and hit the tilde key (~) to open the console. Then, type 'exec YOURCONFIGNAME.cfg' and press enter. If it loads without errors, congrats, that's your current config. Make sure you replace 'YOURCONFIGNAME' with the actual name of your config file, though! Sometimes, I just type 'exec autoexec.cfg' to make sure my go-to settings are in place.
