Kubfu doesn't evolve in Pokemon Violet directly cuz it ain't originally from there. You gotta evolve it in Pokemon Sword or Shield first, then transfer your evolved version over.

Kubfu evolves by training at the Tower of Darkness or the Tower of Waters in the Isle of Armor, which is part of the Pokemon Sword and Shield expansion. Unfortunately, Kubfu and its evolution aren't directly available in Pokemon Violet or Scarlet. So, you'd need to transfer it from Pokemon Sword or Shield after evolving it there.

No can do in Violet or Scarlet, mate. Kubfu's a Sword and Shield exclusive - evolve it there then bring it over.

Actually, Kubfu evolves after getting swole in either the Tower of Darkness or Waters. But catch is, that's in Sword and Shield. Transfer's your friend for Pokemon Violet.
