Usually, CS:GO servers don't stay down for too long. Most downtimes are for maintenance or updates and can last anywhere from a few minutes to a couple of hours. For major updates, it might stretch out a bit, but Valve is pretty good at getting things up and running smoothly again ASAP. IDK why everyone's always sweating server downtime. It's the perfect excuse to go outside or, idk, drink water and blink a few times. Servers will be back before you even realize you've got a life outside CS:GO, trust me.

In my experience, it's rarely longer than an hour. Had a few times when they were doing big updates or patches, and even then, I don't remember it being more than a morning or an afternoon at most. They're pretty efficient over at Valve.
