Adding time to a CS:GO match really depends on the context. If you're playing with friends, you can extend the warm-up period by typing 'mp_warmuptime 90000' in the console, which sets the warm-up time to a generous 90 seconds. For match length, 'mp_roundtime_defuse 60' in a Bomb Defusal map will set round time to 60 minutes, which is honestly way too long, but hey, to each their own!

Tried 'mp_roundtime' in a comp once thinking I could sneak in extra time for a bathroom break. Spoiler: doesn't work that way. You need server privileges or you're just typing sweet nothings into the console.
