Easy peasy! Just hit the 'B' button on your controller when your Pokémon starts evolving. This stops the evolution right then and there. Works every time unless the game decides to glitch, but that's as rare as a shiny Zubat.

Actually, letting your Pokémon evolve is usually the way to go. They get stronger and learn new moves. But hey, if you really love that cute little phase or need them to learn a specific move only available in their current form, smashing 'B' does the trick.
