Easiest way? Right click on CS:GO in your Steam library > Properties > Set Launch Options. Here, type '-w WIDTH -h HEIGHT' but replace WIDTH and HEIGHT with your desired resolution numbers. For example, '-w 1920 -h 1080' for full HD. Hit OK, and next time you launch CS:GO, it'll be in your new resolution!

Change it from the config file if you're comfy with digging into game files. Navigate to your CS:GO folder, find the 'config.cfg' or 'autoexec.cfg' file, open it with a text editor, and add the lines 'mat_setvideomode WIDTH HEIGHT 0' - WIDTH and HEIGHT being your resolution values. Save the file, and you're all set.
