Just tweak the config file! Navigate to your CS:GO config folder, usually found in the Steam directory under '\steamapps\common\Counter-Strike Global Offensive\csgo\cfg'. Open the video settings file 'video.txt' with a text editor and look for "setting.defaultres" and "setting.defaultresheight". Change these to your desired width and height, save the file, and you're good to go.
