Just edit the video settings file directly. Navigate to the cfg folder in your CS:GO directory, usually under Steam\steamapps\common\Counter-Strike Global Offensive\csgo\cfg. Open the video.txt file with a text editor, and change the 'setting.defaultres' and 'setting.defaultresheight' to your preferred resolution values. Save the changes, and you're all set for the next game launch.

Easy peasy lemon squeezy! Just right-click CS:GO in your Steam library, go to properties, then set launch options, and type in '-w WIDTH -h HEIGHT' replacing WIDTH and HEIGHT with your desired resolution numbers. So for 1920x1080, it'd look like '-w 1920 -h 1080'. Hit ok, and the next time you launch CS:GO, it'll be in your new resolution!

Trust me, did the launch option method last week when my game decided to go 800x600 on me. Worked like a charm and didn't even have to squint at the pixelated mess of a menu.

No need to complicate things, just stick to in-game settings IMO. Better safe than messing up game files.
