Just type 'sv_gravity' and then your desired number. But remember, this only works if you got admin rights or you're in a private server. Don't try this in regular matchmaking, you'll just waste your time lol.

To change server gravity in CS:GO, you're gonna need to access the console first. So make sure you enable that from the game settings. Once it's up, type 'sv_gravity' followed by a number. The default is 800. Lower numbers mean less gravity, higher numbers mean more. So, if you wanna feel like you're walking on the moon, try setting it to like 200 or something!
