In Pokemon Scarlet, you can't directly see the numerical values of EVs like you might in some fan-made tools or third-party sites. However, you can get a good idea of your Pokemon's EVs through the effort ribbon and by checking their stats. If a Pokemon has maxed out its EVs, it will receive an Effort Ribbon from a lady in Montenevera. Also, by observing which stats increase more upon leveling up, you can infer where you've invested your EVs. Not super precise, but it gives you a general idea!

Honestly, tracking EVs in Pokemon Scarlet requires a bit of guesswork since the game does not provide explicit EV stats. What I do is keep a manual log of the EVs I'm training in by noting which Pokemon my team battles, as each Pokemon defeated gives specific EVs. It's a bit old school, but it keeps surprises at bay during competitive matches.
