For me, I just keep track from the start. If you know which Pokemon give which EVs and keep a tally, you never really need to 'check' since you already know.

In Pokemon Violet, checking EVs isn't as straightforward as checking other stats, since the game doesn't display them directly. But, you can get a rough idea through the use of Berries that lower EVs (like Pomeg, Kelpsy, etc.), as each Berry eaten indicates your Pokemon had at least 10 EVs in that stat. Or, pay a visit to the NPC in Montenevera, who gives your Pokemon the Effort Ribbon if they've maxed out their EVs, signaling you've hit the 510 total cap or 252 in a single stat.
