Just catch a Mimikyu and watch it sweep her whole team. Trust me, works every time. Mimikyu's Disguise ability lets it take a hit without any damage, and it's a Ghost/Fairy type, which is perfect against Eri's Psychic types.

Eri's team is pretty tough, but you can beat her by focusing on type advantages! She uses Psychic-type Pokémon, so your best bet is to bring in some strong Bug, Ghost, or Dark-type Pokémon to counter her. Pokémon like Scyther, Gengar, or Tyranitar can be super effective against her team. Also, don't forget to level up your Pokémon and equip them with the right moves.
