Downloading old CS:GO demos is a walk in the CS:GO park! Just fire up the game, head to the 'Watch' tab, and click on 'Your Matches.' You'll see a list of your recent games there. If you're looking for a demo that's not listed, you'll need the match share code. Got the code? Paste it into the 'Downloads' tab under 'Watch' and you're golden! If it's super old, though, you might be outta luck. Valve servers only keep them for a certain amount of time.

Honestly, why bother? The game's constantly evolving, just focus on the new strats and forget the old demos.
