Hot take, but if you're trying for Espeon, don't even bother at night. Eevee won't evolve into Espeon then, no matter how happy it is. Make sure it's daytime in your game, or you'll end up with an Umbreon instead.

To evolve Eevee into Espeon in Pokemon Scarlet, you gotta make sure your Eevee is super happy during the day! Friendship is key here, so treat Eevee well by feeding it berries, playing with it, and not letting it faint in battles. Once Eevee's friendship level is high enough, level it up during daylight hours in-game (not nighttime), and voila! You'll have yourself an Espeon!

From my experience, walking around with Eevee in your party helps boost friendship faster. Also, using a Soothe Bell really speeds up the process! Just remember, it has to be day in your game when you level up Eevee for it to evolve into Espeon.
