It's all about that friendship level! Max it out and then just level Eevee up during the day. No special items needed, except make sure it's not holding an Everstone. Easy peasy.

Honestly, it ain't worth the hassle. Just trade with someone who already has an Espeon. Much faster.

Evolving Eevee into Espeon is not as complicated as it seems! Make sure your Eevee's friendship level is high. You can increase friendship by battling with it, playing with it in camp, and giving it a soothe bell to hold. Once Eevee's friendship level is maxed out, just level it up during the daytime (in-game time). Keep in mind that it must not be holding an Everstone. If done right, Eevee will evolve into Espeon!
