Just a heads up, Eevee won't evolve into Espeon if it levels up at night. Night time evolution leads to Umbreon, not Espeon. Keep it a day-time affair for that psychic kitty!

Eevee evolves into Espeon during the day when its happiness level is high! Make sure you're raising its happiness by battling together, walking together, and using friendship-raising items like the Soothe Bell. Keep it in your party and avoid letting it faint to boost happiness faster. Once it's happy enough during daylight hours in the game, level it up and voila, you'll have your very own Espeon!

In my experience, giving Eevee the Soothe Bell and walking around with it during the day made the evolution super quick. Battles help too, but avoid letting Eevee faint!
