Just evolve Eevee with high friendship during the day. Simple as that.

Actually caught an Espeon by evolving Eevee after accidentally making it super happy. Just play a lot with Eevee in your party, walk a bunch, and make sure it's daytime in the game. Once it's super friendly towards you, boom, Espeon appears next time it levels up. Worked for me!
