To catch a Sylveon in Pokemon Scarlet, first, you gotta get yourself an Eevee, which you can find roaming around areas near the start of the game or in grassy fields. Next step, evolve Eevee into Sylveon by leveling it up with a high friendship level during the day, and make sure it knows a Fairy-type move. Friendship can be increased by battling together, giving it a Soothe Bell to hold, or feeding it berries that increase friendship!

Honestly, it was easier than I thought. Found an Eevee early on, then just spammed it with friendship berries and made sure it learned a Fairy-type move. Voila, got my Sylveon before I knew it.
