To evolve Eevee into Espeon in Pokémon Violet, you gotta max out your friendship with Eevee during the day. Keep leveling it up with high friendship in the daytime, and boom, you'll get your Espeon! Don't let it evolve into something else by mistake, though. No stones required for this one, just good old-fashioned friendship and sunlight.
