Just toss an evolution stone at that Eevee depending on what you want! Water Stone for Vaporeon, Thunder Stone for Jolteon, and so on. Can't get easier than that!

Honestly, all you need for most Eevee evolutions is the right stone, but for Espeon and Umbreon, it's all about that friendship level. Make sure Eevee really likes you before you go trying for one of those.
