Just use berries, but honestly, why would you want to lower EVs? Max those stats out!

Lowering EVs in Pokémon Violet is quite simple! Just grab some berries. Berries like Pomeg, Kelpsy, Qualot, Hondew, Grepa, and Tamato can reduce the EVs of your Pokémon. Each berry lowers the EVs in a specific stat, so choose wisely depending on which stat you're looking to decrease. Feed those to your Pokémon, and you'll see those EVs drop.
