Easy peasy! Just hit your tilde key (~) to open the console while watching your demo and type 'cl_drawhud 0' (without quotes). This command hides the entire HUD. If you wanna bring it back, simply type 'cl_drawhud 1'. Remember, you gotta have the console enabled from the game settings first!
