Just hit up the console and type 'unbind [key]' - ez pz. No need to make it more complicated than that.

In my experience, messing with binds can get tricky, so make sure you know what each key does before you go unbinding willy-nilly. You don't wanna end up in a clutch situation and your 'reload' key does nothing because you unbound it by mistake. Use 'unbind [key]' carefully!
