Depends on your playstyle! Knives are better if you're aiming for a Genocide run and want to deal heavy damage. Gloves are more suited for a more balanced approach or Pacifist run.

Knives are better. Period.
I've found gloves to be more versatile. They give you a chance to practice timing and patience. Plus, you won't feel as guilty dodging attacks instead of going full slice-and-dice!
Knives are definitely the way to go if you want to unleash your inner Chara and dish out serious damage! But gloves offer a unique challenge and can be fun to use too.
